John-Paul Henaff, Wine Director

John-Paul Henaff brings more than 15 years of experience in the wine and beverage industry to his role as wine director at Ame restaurant. In addition to staff training and education, his responsibilities include managing Ame’s wine list of hand-crafted vintages from an international roster of small producers, including selections from France, Germany, Austria, Italy and the United States, as well as managing the restaurant’s sake program, which features sake from small regional producers in Japan.

Most recently, Henaff held the position of sommelier at Las Vegas’ Table 10 restaurant located in the heart of Las Vegas at the Palazzo. Henaff was an integral member of the restaurant’s opening team and developed the restaurant’s wine program. In this position, Henaff was responsible for purchasing, inventory and maintenance of the wine list as well as staff management and guest relations. Prior to joining Table 10, Henaff spent nine years working with Chef Emeril Lagasse, first as a cook and later taking over as sommelier at Emeril’s Orlando in 2004.

Henaff is a certified sommelier and is currently working on his Advanced Sommelier Certificate through the Court of Master Sommeliers. He has spent extensive time traveling and studying in key domestic and international wine regions. To further his winemaking and culinary knowledge, Henaff studied nutrition and food science at Florida State University, and has spent time in the kitchen working as a sous chef and pastry assistant,.
